Determine appropriate Food Safety and Standards Authority (FSSAI) licensing

Begin by defining the food products, activities, premises and planned markets. Use FSSAI's current licensing and registration guidance to establish the route that applies to the business. Keep the assessment with its assumptions and supporting documents. Product and activity details matter, so a generic turnover-only checklist should not be used to select a licence for every food operation.

Ask the responsible food-safety professional to confirm the applicable licensing or registration category, product permissions and premises requirements using the current official process. Check the status and scope of proposed suppliers as well as your own operation. Record the evidence and review dates. Do not describe a supplier as certified or compliant simply because a licence number appears on a quotation.

Enforce FSSAI Schedule 4 sanitary and hygienic operational practices

Schedule 4 of the Food Safety and Standards (Licensing and Registration of Food Businesses) Regulations establishes mandatory sanitary and hygienic standards for food manufacturing premises. Facility engineering must prevent cross-contamination between raw material receiving, processing, packaging and finished goods storage zones.

Have a qualified food-safety team review layout, contact materials, water suitability, cleaning arrangements, pest control and employee hygiene for the actual process. Separate raw materials, work in progress and finished products where the assessed risks require it. Keep practical records of checks and corrective action. The appropriate design and testing programme depend on the product and facility, not a universal specification copied from an article.

Implement Hazard Analysis Critical Control Point (HACCP) protocols

Modern food safety governance relies on proactive risk prevention through Hazard Analysis Critical Control Point (HACCP) principles. Identifying biological, chemical and physical hazards across manufacturing stages allows teams to establish monitored Critical Control Points (CCPs).

Identify the hazards relevant to the product and process with a qualified team. Agree on monitoring, acceptance criteria and the action required when a control fails. Keep the affected batch identifiable while the issue is assessed. Test whether staff can follow the procedure during an ordinary shift. A documented plan only helps when responsibilities and records match what happens on the production floor.

Adhere to FSSAI packaging and nutritional labeling regulations

Check proposed labels against the current FSSAI Labelling and Display Regulations and other applicable requirements. Review the actual product, pack and sales channel before approving artwork. Keep a controlled copy of the approved label and record who checked it. Changes to ingredients, claims or packaging should trigger review before the next print run, not after stock has been distributed.

Ask the relevant specialists to confirm the ingredient, allergen, nutrition, quantity, date and other declarations required for the specific product. Verify the information against suitable product records and testing where needed. Do not copy a competitor's label or assume that every declaration uses the same basis. Maintain batch identification so questions about a pack can be traced to the associated production records.

Food manufacturing regulatory compliance checklist

  • Identify the products, activities, premises and intended markets.
  • Confirm the current licensing or registration route using official guidance.
  • Have qualified professionals assess hygiene and process controls.
  • Agree on appropriate testing, monitoring and corrective action.
  • Check the actual label against applicable current requirements.
  • Retain approved specifications and traceable batch records.

For a conversation about a food supply requirement, share the product, intended use and proposed manufacturing or supply arrangement. Include the decision you need to make, the person who can approve it and any date that genuinely constrains the work. A short brief with unresolved questions clearly marked is useful; there is no need to send confidential records or a finished specification just to start the discussion.
